That healthy, white veggie is everywhere… and for good reason! It tastes so good which is why we want Everything Cauliflower! Creamy, cheesy, and a little bit spicy, this version of a creative cauliflower concoction is the most delicious one we’ve found yet. Your meal just got even better with Everything Cauliflower! We’re sure of it!

Ingredients

  • 4 tablespoons plus 1 teaspoon unsalted butter, divided
  • 4 cloves garlic, thinly sliced
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon ground pepper, divided
  • 1/3 cup all-purpose flour
  • 3 cups whole milk
  • 2 large heads cauliflower, cored and cut into 2-inch-thick florets
  • 1/4 cup chives, finely sliced, divided
  • 1/2 teaspoon cayenne pepper
  • 1 1/3 cups Parmigiano-Reggiano cheese, finely grated
  • 3 tablespoons toasted sesame seeds
  • 1 tablespoon poppy seeds
  • 1 1/2 teaspoons caraway seeds

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Use 1 teaspoon of the butter to grease a broiler-safe casserole dish.

Step 3 –In a large pot over medium-high heat, melt the remaining butter.

Step 4 –Reduce the heat to medium. Add the garlic, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper to the melted butter and cook, while stirring, until it is fragrant, about 1-2 minutes.

Step 5 –Add the flour to the garlic-butter and whisk to combine. Cook the seasoned roux, stirring constantly, until the flour smell disappears, about 2-3 minutes.

Step 6 –Gradually add the milk to the roux, a little at a time, and whisk after each addition.

Step 7 –Cook the milk mixture, while whisking, until it has thickened, about 2 minutes.

Step 8 –Add the cauliflower, 3 tablespoons of the chives, and the cayenne to the sauce mixture and fold to combine.

Step 9 –Pour the cauliflower mixture into the prepared casserole dish and use a spatula to smooth the top.

Step 10 –Bake the cauliflower mixture until the cauliflower is tender and beginning to brown, about 35-40 minutes.

Step 11 –Transfer the casserole dish to a wire rack.

Step 12 –Position an oven rack in the upper third position in the oven, then switch the oven setting to broiler on high heat.

Step 13 –In medium bowl, add the Parmigiano-Reggiano cheese, the sesame seeds, the poppy seeds, the caraway seeds, the remaining salt, and the remaining pepper and stir to combine.

Step 14 –Sprinkle the cheese mixture over cauliflower mixture.

Step 15 –Place the baking dish in the oven and broil the cauliflower mixture until the cheese has melted and the top is golden, about 2 minutes.

Step 16 –Garnish the cauliflower mixture with the remaining chives and serve.
