Fa La La Chicken

After you’ve decked the halls and you’re feeling extra jolly (’tis the season to be), you need a dish so festive and tasty that it’ll make you want to sing! Fa La La Chicken will have you humming the happiest Yuletide carol at first glance. This merry munch puts juicy, golden chicken thighs in a rosy and sweet, yet tart cranberry marinade to create a main that’s as beautiful as it is tasty. Only the most joyous of dishes can be served this time of year, and Fa La La Chicken will have everyone striking the harp and joining the chorus! Sing along and dig in!

Ingredients

  • 2 cloves garlic
  • 1/4 cup balsamic vinegar
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon soy sauce
  • 1 1/2 cups fresh cranberries, divided
  • 8 chicken thighs, bone-in and skin-on
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 tablespoon fresh thyme sprigs, chopped
  • 1 tablespoon fresh rosemary, chopped, plus more, to taste, whole sprigs, for garnish

Directions

Step 1 –In the bowl of a food processor, add the garlic, the balsamic vinegar, the olive oil, the soy sauce, and 1/2 cup of the cranberries and process until it is smooth.

Step 2 –In a large resealable plastic bag, add the chicken thighs and top with the cranberry marinade.

Step 3 –Seal the bag and refrigerate the chicken thighs for at least 30 minutes and up to 1 hour.

Step 4 –Preheat the oven to 375 degrees F.

Step 5 –Lightly coat a large oven-safe skillet with nonstick cooking spray.

Step 6 –Place the chicken thighs, skin-side down, in the skillet and season with the salt, the pepper, the thyme, and 1 tablespoon of the chopped rosemary. Reserve the marinade.

Step 7 –Sprinkle the remaining cranberries into the skillet.

Step 8 –Roast the chicken thighs until the skin begins to brown and the meat is nearly cooked through, about 20-25 minutes.

Step 9 –Flip the chicken thighs and generously brush each of them with the reserved marinade. Discard the remaining marinade.

Step 10 –Increase the oven temperature to 425 degrees F.

Step 11 –Cook the chicken thighs until they reach an internal temperature of 165 degrees F and are crispy, about 5-8 minutes.

Step 12 –Serve the chicken thighs topped with the roasted cranberries and the extra rosemary sprigs.
