Ingredients
- 4 chicken breasts, boneless and skinless, fat trimmed
- 2 teaspoons taco seasoning
- 2 green, yellow, red, or mixed bell peppers, thinly sliced
- 1 red onion, thinly sliced
- 2 tablespoons olive oil
- 1/2 cup cheddar or Mexican-blend cheese, shredded
- fresh cilantro, to taste, torn, for garnish
- rice, cooked, optional, to taste, for serving

Directions
Step 1 –Add the chicken breasts to a 9×13-inch baking dish and sprinkle with the taco seasoning.
Step 2 –Layer the bell peppers and the onions on top of the chicken breasts.
Step 3 –Evenly drizzle the olive oil over the veggie layer.
