Ingredients
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups milk or buttermilk
- 2 large eggs
- 1/4 cup applesauce
- 1/4 teaspoon ground cinnamon
- 1/2 cup Granny Smith apple, shredded
- maple syrup, optional, to taste, for serving
Directions
Step 1 –In a large mixing bowl, sift together the flour, the sugar, the baking powder, the baking soda, and the salt.
Step 2 –Add the milk, the eggs, the applesauce, and the cinnamon to the flour mixture and whisk until just until combined.
Step 3 –Add the shredded apple to the batter mixture and stir to combine.
Step 4 –Preheat a flat griddle over medium-high heat.
Step 5 –Scoop 1/4 cup of the pancake batter onto the griddle, making sure not to overcrowd the griddle, and cook until the pancakes start to form bubbles at the edges, about 3 minutes.
Step 6 –Flip the pancakes and cook until golden-brown on all sides, about 2-3 minutes.
Step 7 –Transfer the cooked pancakes to a plate and repeat with the remaining batter.
Step 8 –Serve topped with the syrup.
