Ingredients

For the soup:

  • 2 tablespoons extra-virgin olive oil
  • 1 small red onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 4 cups chicken stock
  • 3 (15-ounce) cans black beans, rinsed and drained
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 1 tablespoon chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1 pound smoked sausage, fully cooked and cut into 1-inch slices

Optional toppings:

  • sour cream, to taste
  • cilantro, chopped, to taste
  • red onion, minced, to taste

Directions

Step 1 –Heat the olive oil in a large pot set over medium-high heat.

Step 2 –Add the onion to the oil and cook, stirring often, until the onion begins to soften, about 4 minutes.

Step 3 –Add the garlic, the red bell pepper, and the green bell pepper and cook, stirring often, until the garlic is fragrant and the bell peppers begin to soften, about 2-3 minutes.

Step 4 –Add the chicken stock, the black beans, the cumin, the garlic powder, the oregano, the chili powder, the salt, and the pepper.

Step 5 –Raise the heat to high and bring the mixture to a boil.

Step 6 –Once the mixture is boiling, reduce the heat back down to medium-low and simmer for 10-15 minutes.

Step 7 –Using an immersion blender or a stand blender, blend 1/3 of the soup. This helps achieve a thick, creamy soup texture.

Step 8 –Add the sausage and cook until the sausage is heated through, about 3-4 minutes.

Step 9 –Serve the soup with your favorite toppings.
