Fancy Turkey Tetrazzini Bake

Fancy Turkey Tetrazzini Bake doesn’t just want to use your Thanksgiving leftovers. It wants to zhush them up and make them something truly memorable! Chunks of savory turkey nuzzle in between buttery, tender egg noodles in an exceptionally creamy and cheesy parmesan sauce. Mmm, it might sound too good to be true, but Fancy Turkey Tetrazzini Bake is ready to turn your holiday extras into high-class dining!

Ingredients

  • butter, to taste, for greasing the foil
  • 1 (1-ounce) package dried porcini mushrooms
  • 2 1/2 cups leftover roasted turkey, chopped into large pieces
  • 8 ounces wide egg noodles, cooked
  • 3 tablespoons olive oil
  • 3 tablespoons shallots, finely chopped
  • 1 teaspoon thyme leaves, chopped
  • cayenne pepper, to taste
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1 tablespoon cognac
  • 1/4 teaspoon kosher salt
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup breadcrumbs
  • parsley leaves, optional, to taste, for garnish

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Using the butter, grease one side of a sheet of foil. Set it aside.

Step 3 –Soak and drain the mushrooms according to the package directions, reserving 1 1/2 cups of the liquid.

Step 4 –Chop the mushrooms.

Step 5 –In a large bowl, add the chopped mushrooms, the roasted turkey, and the egg noodles and mix to combine.

Step 6 –In a large skillet over medium heat, heat the olive oil.

Step 7 –Add the shallots to the hot oil and sauté until softened, about 5 minutes.

Step 8 –Add the thyme leaves and the cayenne pepper and cook until the shallots become golden, about 2 minutes.

Step 9 –Stir in the flour and cook until browned, about 1-2 minutes.

Step 10 –Add the milk, the cognac, and the reserved mushroom liquid, while scraping the bottom of the skillet to release the browned bits.

Step 11 –Season the shallot mixture with the salt and bring it just to a boil.

Step 12 –Pour the shallot mixture over the turkey mixture and toss to combine.

Step 13 –Transfer the turkey mixture to a 9×13-inch baking dish.

Step 14 –Cover the baking dish with the prepared foil, butter-side down, and bake for 25 minutes.

Step 15 –In a small bowl, add the parmesan cheese and the breadcrumbs and mix to combine.

Step 16 –Remove the foil from the casserole and sprinkle it with the parmesan-breadcrumb mixture.

Step 17 –Bake until golden, about 10 minutes.

Step 18 –Serve garnished with the parsley leaves.
