Ingredients
- 2 tablespoons avocado oil, divided
- 1/2 medium yellow onion, sliced
- 2 medium bell peppers, colors of your choice, sliced
- 1 1/2 pounds chicken breasts, boneless and skinless, sliced or cubed
- 2 teaspoons garlic, minced
- 1/2 cup tomato sauce
- 1/3 cup salsa, store-bought or homemade
- 2 teaspoons smoked paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup black beans, drained and cooked, optional
- 2 medium whole-wheat tortillas, cut into pieces
- 2 cups spinach
- 1 1/2 cups Mexican blend cheese, shredded
- 1/4 cup cilantro leaves
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –In an oven-safe skillet over medium-high heat, heat 1 tablespoon of the avocado oil.
Step 3 –Add the onions and the bell peppers to the oil and cook until they are tender, about 7-10 minutes.
Step 4 –Transfer the veggie mixture to a plate.
Step 5 –Add the remaining oil to the skillet.
Step 6 –Add the chicken pieces and the garlic to the oil and cook until the chicken reaches an internal temperature of 165 degrees F, about 4-5 minutes.
Step 7 –While the chicken is cooking, add the tomato sauce, the salsa, the paprika, the cumin, the chili powder, the salt, and the pepper to a bowl and mix to combine.
Step 8 –Pour 1/2 of the sauce mixture over the chicken and cook, about 4-5 minutes.
Step 9 –Add the cooked veggie mixture to the chicken mixture.
Step 10 –Stir the black beans, the tortilla pieces, and the spinach into the chicken mixture.
Step 11 –Add the remaining sauce to the fajita mixture and stir to combine.
Step 12 –Transfer the skillet from the heat and sprinkle with the cheese and the cilantro.
Step 13 –Bake until the cheese melts and the fajita bake is heated through, about 7-10 minutes.
Step 14 –Serve.
