Ingredients
- 1 pound 90% lean ground beef
- 1 (14.5-ounce) can diced tomatoes with mild green chiles, undrained
- 1 (14.5-ounce) can beef broth
- 1 tablespoon chili powder
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 2 cups instant brown rice, uncooked
- 1 medium sweet red pepper, sliced
- 1 medium green pepper, sliced
- 1 cup Colby-Monterey Jack cheese, shredded
Directions
Step 1 –Heat a large cast iron skillet over medium heat.
Step 2 –Add the beef to the skillet and cook until it is no longer pink, about 6-8 minutes.
Step 3 –Break the beef into crumbles and drain the liquid from the skillet.
Step 4 –Add the tomatoes, the broth, the chili powder, the salt, and the garlic to the beef mixture and bring it to a boil.
Step 5 –Add the rice, the red peppers, and the green peppers to the beef mixture.
Step 6 –Lower the heat and simmer the rice mixture, covered, until the liquid has absorbed, about 8-10 minutes.
Step 7 –Transfer the skillet from the heat, sprinkle the top of the rice mixture with the cheese, cover the skillet, and let it stand until the cheese is melted.
Step 8 –Serve.
