Fiesta Meatloaf

Ingredients

  • 1 pound lean ground beef
  • 1 pound lean ground pork
  • 3/4 cup water, warm
  • 2 eggs, slightly beaten
  • 1/3 cup Picante sauce
  • 1 (1-ounce) package dry onion soup mix
  • 3/4 cup dry bread crumbs
  • 1/4 cup green bell pepper, minced
  • 1 (10.75-ounce) can of condensed nacho cheese soup
  • green onions, optional, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×5-inch loaf pan.

Step 3 –Mix the beef, pork, water, eggs, Picante sauce, onion soup mix, bread crumbs, and the bell pepper in a mixing bowl until evenly blended.

Step 4 –Pack the meat mixture in the prepared loaf pan.

Step 5 –Poke holes in the loaf with a fork nearly to the bottom of the pan.

Step 6 –Pour the cheese soup over the top of the loaf, spreading evenly.

Step 7 –Bake until the loaf is no longer pink in the center and an instant-read thermometer inserted into the center reads 160 degrees F, about 1 hour 30 minutes.

Step 8 –Garnish with green onions and serve.
