Fisherman’s Dinner

The Fisherman’s Dinner can satisfy even the most salt-crusted sailor, with the sweet fish readily absorbing the zesty Cajun seasoning and the tangy, bright lemon flavor. Pan-fried to a tender golden brown, Fisherman’s Dinner goes perfectly with some classic potato chips or a pile of roasted vegetables. No matter what, you’ll be ready to face the sea again in no time, whether it’s a literal sea or not!

Ingredients

  • 1 large egg, lightly beaten
  • 2 tablespoons lemon juice
  • 1/2 cup all-purpose flour
  • 1/4 cup yellow cornmeal
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 4 (6-ounce) catfish fillets
  • 3 tablespoons canola oil

Directions

Step 1 –In a shallow bowl, combine the egg and the lemon juice.

Step 2 –In another shallow bowl, combine the flour, the cornmeal, the Cajun seasoning, the garlic powder, and the salt.

Step 3 –Dip the catfish fillets into the egg mixture and then into the cornmeal mixture.

Step 4 –In a large skillet, heat the oil over medium heat.

Step 5 –Fry the fish, two at a time, just until the fillets begin to flake easily with a fork and it reaches 145 degrees F internally, about 5-6 minutes per side.

Step 6 –Serve.
