Ingredients
For the casserole:
- 5 pounds Yukon Gold potatoes, peeled and cut into 1-inch pieces
- 1 cup butter, cubed
- 1 cup sour cream
- 2 teaspoons salt
- 3/4 teaspoon pepper
- 1/2 cup heavy cream
- 1 1/2 cups cheddar cheese, shredded
- 1 1/2 cups Monterey Jack cheese, shredded
- 1/4 cup parmesan cheese, grated
- 2 tablespoons fresh chives, minced
For the toppings:
- 1 cup cheddar cheese, shredded
- 1 (6-ounce) can crispy fried onions
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 9×13-inch casserole dish.
Step 3 –Place the potatoes in a 6-quart stockpot and add enough water to cover them by about 1 inch.
Step 4 –Bring the potatoes to a boil.
Step 5 –Reduce the heat to medium and cook, uncovered, until the potatoes are tender, about 10-15 minutes.
Step 6 –Drain the potatoes and transfer them to a large bowl.
Step 7 –Add the butter, the sour cream, the salt, and the pepper to the potatoes and beat until they are blended.
Step 8 –Beat the whipping cream into the mashed potatoes.
Step 9 –Stir 1 1/2 cups of the cheddar, the Monterey Jack cheese, the parmesan cheese, and the chives into the mashed potatoes.
Step 10 –Transfer the mashed potatoes to the prepared casserole dish.
Step 11 –Cover the casserole dish and bake, stirring after 30 minutes, for 45 minutes.
Step 12 –Sprinkle the casserole with the remaining cheddar cheese and the crispy fried onions and bake, uncovered, until they are heated through, about 15 minutes.
Step 13 –Serve.
