Ingredients

  • 2 tablespoons olive oil
  • 2 pounds yellow onions, thinly sliced
  • 1/8 teaspoon baking soda
  • 1/2 cup breadcrumbs, unseasoned and dried
  • 1/2 cup whole or 2% milk
  • 2 cloves garlic, minced
  • 2 teaspoons Worcestershire sauce
  • 1 1/2 teaspoons kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 pounds ground beef, veal, pork, or blend
  • 2 large eggs, lightly beaten
  • 1 cup Gruyère cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a loaf pan with foil or spray with a non-stick cooking spray.

Step 3 –Simmer the oil in a large pot or Dutch oven over medium-high heat.

Step 4 –Add the onions and baking soda, stirring every few minutes until the onions are golden brown and caramelized, about 15 minutes.

Step 5 –Combine the breadcrumbs, milk, caramelized onions, garlic, Worcestershire sauce, salt, and pepper in a bowl. Set aside some onions for garnish.

Step 6 –Using your fingers, gently combine the ground meat and the eggs into the flavoring mixture.

Step 7 –Place the mixture into the prepared loaf pan.

Step 8 –Bake until the internal temperature is at least 165 degrees F, about 1 hour.

Step 9 –Remove the meatloaf from the oven and sprinkle the caramelized onions and Gruyere on the top.

Step 10 –Place the meatloaf into the broiler until the cheese is melted and brown, about 2-3 minutes.

Step 11 –Allow 15 minutes for the meatloaf to cool inside the pan.

Step 12 –Slice and serve.
