Enter Fun Aunt Carly’s Buckeyes; they have a smooth peanut butter base mixed with bold vanilla extract, rich butter, and sweet sugar to form the creamiest globes of goodness. Then they’re dipped in everyone’s favorite melty chocolate that later creates the perfect crunch and elevates the luscious peanut butter balls. In just about an hour, Fun Aunt Carly’s Buckeyes become a tasty treat that is as playful and delightful as good ‘ole Aunt Carly herself!
Ingredients
- 1 1/2 cups smooth peanut butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
- 1/3 cup butter, melted
- 2-3 cups confectioners’ sugar, to taste
- 1 (12-ounce) bag of semi-sweet chocolate chips
Directions
Step 1 –In a medium bowl, mix the peanut butter, vanilla extract, salt, and butter.
Step 2 –Slowly stir in the confectioners’ sugar, 1/2 cup at a time, until the mixture is almost dry and cakey. It should resemble the filling of a peanut butter cup. You can use a blender or stir by hand for this step and then knead by hand when the peanut butter mixture thickens.
Step 3 –Once thick, roll the peanut butter mixture into nickel-sized balls and place them on waxed paper or aluminum foil.
Step 4 –Over low heat, melt the chocolate chips in a saucepan while stirring quickly.
Step 5 –Using a toothpick, spear a peanut butter ball and dip it halfway into the melted chocolate. It should resemble a buckeye nut.
Step 6 –Place the chocolate buckeyes on the waxed paper/aluminum foil.
Step 7 –When all the peanut butter balls are chocolate-dipped, place them in the refrigerator to cool for at least 1 hour.
Step 8 –Serve!
