Ingredients
- 2 (10-ounce) packages frozen mixed berries (about 4 cups)
- 1 tablespoon fresh ginger, grated
- 1 tablespoon cornstarch
- 2 teaspoons lime zest, finely grated
- 3 large eggs
- 1 cup low-fat milk
- 1 tablespoon maple syrup
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 6 slices whole-grain bread
- confectioners’ sugar, to taste, for topping
- yogurt, to taste, for serving

Directions
Step 1 –Preheat the oven to 425 degrees F.
Step 2 –In a large cast-iron skillet, add the mixed berries, the ginger, the cornstarch, and the lime zest and mix to combine.
Step 3 –In a medium bowl, add the eggs, the milk, the maple syrup, the vanilla extract, the cinnamon and the nutmeg and whisk to combine.
Step 4 –Dip the bread slices into the egg mixture, until lightly soaked, and transfer them to the top of the berry mixture.
Step 5 –Bake, uncovered, until golden-brown, for about 18-20 minutes.
Step 6 –Spoon the french toast bake onto the plate, add the confectioners’ sugar and the yogurt, and serve.
