Ingredients
- 2 (14.5-ounce) cans cream of chicken soup
- 1 3/4 cups water
- 1 cup sour cream
- 3/4 cup buffalo sauce
- 1 tablespoon chicken broth
- 2 cups quick-cooking rice, uncooked
- 4 cups chicken, cooked and shredded
- 1 1/2 sleeves buttery crackers, crushed into fine crumbs
- 1/4 cup butter, melted
- fresh parsley, chopped
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –In a large bowl, stir the cream of chicken soup, the water, the sour cream, the buffalo sauce, and the chicken broth together.
Step 3 –Stir the rice into the filling mixture and stir to combine.
Step 4 –Stir the chicken into the filling mixture.
Step 5 –Spread the chicken mixture into a 9×13-inch baking dish.
Step 6 –In a bowl, mix the cracker crumbs and the melted butter until evenly coated.
Step 7 –Sprinkle a thin layer of the cracker layer on top of the casserole.
Step 8 –Bake until the edges of the casserole start to bubble, about 40-50 minutes.
Step 9 –Serve warm and garnished with the parsley.
