For the soup:

  • 1 (30-ounce) bag frozen hashbrown potatoes
  • 2 (14-ounce) cans chicken broth
  • 1 (10.75-ounce) can cream of chicken soup
  • 1/2 cup onion, chopped
  • 1/3 teaspoon ground black pepper
  • 1 (8-ounce) package cream cheese, softened

Optional toppings:

  • green onion, minced
  • cheddar, shredded, to taste
  • bacon, crumbled, to taste


Step 1 –Into a slow cooker, place the frozen hashbrowns, the chicken broth, the cream of chicken soup, the onion, and the ground black pepper.

Step 2 –Cover and cook on low until the potatoes are tender, about 5 hours.

Step 3 –Add the cream cheese and cook, stirring occasionally, until melted, about 30 minutes.
