Ingredients
- 2 cups all-purpose flour, plus more, to taste, for dusting the pan
- 1 cup vegetable oil
- 2 eggs
- 2 cups white sugar
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 cups apples, peeled and cored, diced
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 9×13-inch cake pan, and then, using the extra flour, lightly dust the pan, tapping out the excess.
Step 3 –In a mixing bowl, add the oil and the eggs and use an electric hand mixer to beat until creamy.
Step 4 –Add the sugar and the vanilla extract to the egg mixture and beat well.
Step 5 –In another bowl, stir 2 cups of the flour, the cinnamon, the baking soda, and the salt together.
Step 6 –Slowly add the flour mixture to the egg mixture, mixing until combined. The batter will be very thick.
Step 7 –Fold the apples into the batter using a wooden spoon.
Step 8 –Spread the batter in the prepared cake pan.
Step 9 –Bake the cake until a toothpick inserted into the center comes out clean, about 45 minutes.
Step 10 –Let the cake cool on a wire rack.
Step 11 –Slice and serve.
