Ingredients
- 2 1/4 pounds medium yellow potatoes, such as Yukon Gold, scrubbed
- water, to taste
- salt, to taste
- 1/3 cup fresh parsley, chopped

Directions
Step 1 –In a large pot, add the potatoes and top with enough of the water to cover them. Sprinkle with the salt and bring to a boil.
Step 2 –Reduce the heat to medium-low and simmer the potatoes until they are tender, about 20 minutes. Drain the water.
Step 3 –Serve the potatoes hot, garnished with the parsley.
