They say the fastest way to a man’s heart is through his stomach, and few dishes work faster this way than Get-Your-Man Chicken. Here’s how to win him all over again: extra-tender braised chicken in a herbaceous tomato sauce all piled atop hot buttered rice. Wow, now if that’s not a recipe to enchant him from the first bite, nothing else will. It’s time to show him you mean business, so Get-Your-Man Chicken it is!
Ingredients
- 2 tablespoons olive oil
- 6 chicken thighs, skinless
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 medium onion, sliced
- 1 cup chicken stock
- 1/2 cup white wine
- 1 (14.5-ounce) can crushed tomatoes in thick purée
- 1 teaspoon dried thyme
- 1/2 tablespoon dried rosemary
- 1 tablespoon lemon-pepper
- rice, to taste, cooked, hot, and buttered
- 2 tablespoons fresh parsley leaves, chopped
Directions
Step 1 –Heat the olive oil in a 12-inch skillet over medium-high heat.
Step 2 –Pat the chicken dry with a paper towel and season with the salt and the pepper.
Step 3 –Brown the chicken in the hot oil, 4 minutes on each side.
Step 4 –Transfer the chicken to a plate and drain all but 1 tablespoon of the oil from the skillet.
Step 5 –Add the onion to the skillet and sauté until tender, about 3 minutes.
Step 6 –Add the stock and the wine to the onion and stir, scraping any brown bits off the bottom of the pan.
Step 7 –Turn the heat to high and reduce the onion mixture by half, about 3 minutes.
Step 8 –Add the crushed tomatoes, the thyme, the rosemary, the lemon-pepper, and the browned chicken thighs into the onion mixture.
Step 9 –Cover the skillet and cook on medium-low heat until the chicken internally reaches 165 degrees F and is tender, about 40 minutes.
Step 10 –Serve the chicken and the sauce on top of the rice and sprinkle with the parsley.
