This dish is filled with spicy, savory sausage, smooth cream cheese, fire-roasted tomatoes, and even green chiles for an extra touch of heat. It’s melty, meaty, and perfectly balanced, bringing you back for more every time! Let your taste buds ride the Giddy-Up Dip into an amazing evening!

Ingredients
For the dip:
- 12 ounces hot Italian sausage links, casings removed
- 2 (8-ounce) packages cream cheese, room temperature
- 1 cup sour cream
- 4 ounces sharp cheddar cheese, grated
- 2 cups frozen sweet corn, thawed and drained
- 1 (14-ounce) can fire-roasted diced tomatoes with green chilies, undrained
- 1 (4-ounce) can diced green chiles, undrained
- 1/2 cup fresh jalapeño peppers, diced
- 1/2 cup green onions, sliced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- cayenne pepper, to taste
For topping:
- 2 tablespoons sharp cheddar cheese, grated
- cayenne pepper, to taste
- 1 teaspoon green onion, sliced

Directions
Step 1 –Preheat the oven to 425 degrees F.
Step 2 –Place the sausages in a dry pan over medium heat until they start to sizzle, using a spoon or flat wooden spatula to break them up.
Step 3 –Cook the sausages until they are browned and crumbly, about 10-12 minutes.
Step 4 –Transfer the sausage from the heat and drain the excess fat.
Step 5 –Combine the cream cheese, the sour cream, 4 ounces of the cheddar, the corn, the cooked sausage, the fire-roasted tomatoes with green chilies, the green chiles, the jalapeño peppers, 1/2 cup of the green onions, the salt, the pepper, and the cayenne in a large bowl, mixing until thoroughly combined.
Step 6 –Transfer the mixture to a baking dish, smoothing out the top.
Step 7 –Top the dip with the remaining cheddar and the remaining cayenne.
Step 8 –Place the baking dish on a sheet pan to catch any drippings.
Step 9 –Bake in the center of the oven until the cheese is melted and the dip is bubbling on the outside, about 30 minutes.
Step 10 –Sprinkle the remaining green onions over the top and serve.
