There’s no better way to share in the joys of the kitchen than sharing a slice of hot monkey bread straight out of the oven. By the same token, there’s no better way to share in the holiday cheer than with Gingerbread Monkey Bread. The depth and fragrance of the warm Christmas spices—cinnamon and pumpkin pie spice—bring out the sweetness of the sugary coating around each piece. Of course, it can’t be a perfect gingerbread tribute without a glaze, and the cream cheese glaze all over the top adds a luscious creaminess to each bite. Gingerbread Monkey Bread doesn’t monkey around with how delicious it tastes or how much Christmas cheer it creates!
Ingredients
For the monkey bread:
- 3/4 cup sugar
- 1/4 cup brown sugar
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon cinnamon
- 1/4 cup pumpkin pie spice coffee creamer
- 3/4 cup sweet cream butter, melted
- 3 (12.4-ounce) cans cinnamon roll dough, unrolled and cut into quarters
For the cream cheese glaze:
- 1 (16-ounce) container cream cheese frosting
- 1/4 cup pumpkin pie spice coffee creamer
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Prep a 10-inch Bundt™ pan with non-stick spray.
Step 3 –In a medium bowl, combine the sugar, the brown sugar, the pumpkin pie spice, and the cinnamon. Set aside.
Step 4 –In another bowl, combine the cream cheese frosting and 1/4 cup of the pumpkin pie coffee creamer, blending until combined. Set aside.
Step 5 –In a third bowl, combine the remaining pumpkin pie coffee creamer with the melted sweet cream butter and stir until thoroughly combined.
Step 6 –Dip each of the cinnamon roll pieces into the sweet cream butter mixture and then immediately coat them in the brown sugar mixture.
Step 7 –One by one, stack the coated cinnamon roll pieces into the prepared Bundt™ pan. When you have added 1/2 of the cinnamon roll pieces to the pan, drizzle with 1/2 of the cream cheese glaze, and then continue adding the remaining coated cinnamon roll pieces.
Step 8 –Bake until the monkey bread is golden-brown and no longer doughy, about 35-45 minutes.
Step 9 –Allow the baked monkey bread to rest, about 15 minutes.
Step 10 –Invert the monkey bread onto a serving platter, tapping the top of the monkey bread to release it.
Step 11 –Drizzle with the remaining cream cheese glaze.
Step 12 –Slice and serve.
