The goat cheese base is tangy and creamy and just a little sharp, so it’s already a great dip to begin with, but then, this Goat Spread really pulls out all the stops. The goat cheese is covered with bright, vibrant, and sweet sun-dried tomatoes and a deliciously fragrant garlic and tomato oil! Grab all the crackers you can, because you’ll want to scoop up every last bit of this dip!
Ingredients
- 1 (8.5-ounce) jar julienned oil-packed sun-dried tomatoes
- 2 cloves garlic, minced
- 1 (11-ounce) log fresh goat cheese
- fresh parsley, optional, minced, for garnish
- assorted crackers, to taste, for serving
Directions
Step 1 –Drain the tomatoes, reserving 3 tablespoons of the oil.
Step 2 –In a small skillet, heat the reserved oil, the tomatoes, and the garlic over medium-high heat and cook, stirring, until the garlic is golden and the tomatoes are heated through, about 5 minutes.
Step 3 –Place the goat cheese on a serving plate.
Step 4 –Pour the tomato mixture over the cheese.
Step 5 –Sprinkle with the parsley.
Step 6 –Serve with the crackers.
