We know you’re hungry! And boy, do we have the dish for you! Gobble-It-Up Bake is ready to be, well… you know, gobbled up! This yummy, savory dish is loaded with juicy turkey and your favorite kind of tender rice, plus all the fresh, nourishing veggies you can imagine! It’s topped with lots of rich parmesan cheese to the point that even if you aren’t extremely hungry, you’ll still want bite after bite of it. You truly won’t be able to get enough! Ingredients

  • 2 tablespoons vegetable oil
  • 2 cups fresh mushrooms, sliced
  • 3/4 cup red or yellow sweet pepper, chopped
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon dried thyme, crushed
  • 1/4 teaspoon black pepper
  • 2 cups fat-free milk
  • 1 (10-ounce) package frozen chopped spinach, thawed and well-drained
  • 2 cups brown or white rice, cooked
  • 2 cups turkey or chicken, cooked and chopped
  • 1/2 cup parmesan cheese, plus more for topping, finely shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a 12-inch skillet over medium heat, add the oil, the mushrooms, the sweet peppers, the onion, and the garlic and cook until they are tender.

Step 3 –Stir the flour, the salt, the thyme, and the black pepper into the veggie mixture.

Step 4 –Slowly stir the milk into the veggie mixture and cook, while stirring, until the mixture has thickened and is bubbly.

Step 5 –Stir the spinach, the rice, the turkey, and 1/2 cup of the parmesan cheese into the veggie mixture.

Step 6 –Spoon the veggie mixture into a 2-quart rectangular baking dish and top with the remaining cheese.

Step 7 –Bake the casserole, covered, for 20 minutes.

Step 8 –Uncover the casserole and bake until it is heated through, about 10 minutes.

Step 9 –Let the casserole stand for 15 minutes.

Step 10 –Serve.
