Ingredients
- vegetable oil, to taste
- 2 large ripe plantains or bananas, peeled
- 1 cup self-rising flour
- 1 small onion, cut into wedges
- 1/4 teaspoon salt
- black pepper, to taste
- parsley, to taste, chopped, for garnish
- lime wedges, to taste, for garnish
Directions
Step 1 –In an electric skillet or a deep-fat fryer, add enough of the oil to come about 1/4-inch up the sides, then heat it to 375 degrees F.
Step 2 –In the bowl of a food processor, add the plantains and process until they are smooth.
Step 3 –Add the flour, the onion, the salt, and the black pepper to the plantains and process until it has blended into a moist batter.
Step 4 –By the tablespoonful, drop the plantain batter into the heated oil, in batches, and cook until they are golden-brown, about 1 minute per side.
Step 5 –Place the plantain fritters on a paper-towel-lined plate to drain.
Step 6 –Serve the plantain fritters garnished with the parsley and the lime wedges.
