  • 3 pounds baby Yukon gold potatoes
  • salt, to taste
  • ground black pepper, to taste
  • 3 cups chicken stock
  • 3 tablespoons butter
  • 3 tablespoons fresh parsley leaves, chopped

Step 1 –Place the potatoes in a deep skillet and add the salt and the pepper.

Step 2 –Add the chicken stock and the butter and cover the skillet with a lid.

Step 3 –Cook the potatoes in the stock until almost tender, about 5-8 minutes.

Step 4 –Remove the lid and allow the stock to evaporate, about 5 minutes.
