These speedy, savory, and tender dumplings are cooked in a creamy chicken stock so they absorb all that delicious poultry flavor. Ingredients
- 1 pound chicken tenders, diced
- 1/2 onion, finely diced
- 1 (32-ounce) container chicken stock
- 1 (0.87-ounce) packet chicken gravy mix
- 1 cup milk or half-and-half
- 1 cup frozen mixed vegetables, of your choice
- 2 cups premade baking mix (such as Bisquick™)
- 2/3 cup water, warm
- salt, to taste
- pepper, to taste
- parsley, optional, to taste, for garnish
Directions
Step 1 –Place a large pot on the stove over medium-high heat.
Step 2 –Add the chicken, the onion, and the chicken stock to the pot and cook until the onions are softened and the chicken is cooked through at 165 degrees F internally, about 5-7 minutes.
Step 3 –In a small bowl, whisk the chicken gravy mix and the milk.
Step 4 –Pour the gravy into the pot and stir.
Step 5 –Bring the mixture to a boil and allow it to thicken slightly.
Step 6 –Add the frozen vegetables and stir to combine.
Step 7 –In a medium bowl, combine the premade baking mix with the warm water, stirring until combined.
Step 8 –Drop tablespoonfuls of the prepared baking mix into the pot, spacing the dumplings out as evenly as possible.
Step 9 –Cover the pot tightly and reduce the heat to medium-low.
Step 10 –Steam the dumplings in the soup until puffy and no longer doughy in the middle, about 8-10 minutes.
Step 11 –Season the mixture with the salt and the pepper.
Step 12 –Serve garnished with the parsley.
