  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 3 medium potatoes, peeled and thinly sliced
  • 1 large green pepper, chopped
  • 2 ribs celery, chopped
  • 1 (14.5-ounce) can stewed tomatoes
  • 1/4 teaspoon dried basil

Step 1 –In a Dutch oven over medium-high heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes. Drain the excess grease.

Step 2 –Add an even layer of the onions over the ground beef and sprinkle with 1/3 of the salt and 1/3 of the pepper.

Step 3 –Top the onions with an even layer of the potatoes and sprinkle with 1/2 of the remaining salt and 1/2 of the remaining pepper.

Step 4 –Top the potatoes with an even layer of the green peppers and sprinkle with the remaining salt and the remaining pepper.

Step 5 –Add the celery, the tomatoes and their juices, and the basil on top of the green pepper layer.

Step 6 –Bring the beef-and-veggie mixture to a boil.

Step 7 –Reduce the heat to medium-low. Cover and simmer the beef-and-veggie mixture until the vegetables are tender, about 1 hour.
