Only she could walk out her back door and find something fresh to make a delicious meal from. With fresh-from-the-garden broccoli, she created Grandma’s Favorite Creamy Garden Soup. She somehow can combine just a bit of heavy cream and a head of broccoli (yes, stems and all!) and produce the creamiest soup you will ever taste. No matter the season, Grandma’s Favorite Creamy Garden Soup will fit perfectly into your lunch or dinner menu. It’s so comforting and delicious!
Ingredients
- 1/4 cup unsalted butter
- 1 medium yellow onion, diced small
- 1/4 cup all-purpose flour, spooned and leveled
- 4 cups low-sodium chicken broth, plus more, to taste
- 1 cup water, plus more, to taste
- 1 pound broccoli, cut into florets, stems peeled and chopped
- 1/4 cup heavy cream
- coarse salt, to taste
- ground black pepper, to taste
Directions
Step 1 –In a medium pot over medium heat, melt the butter.
Step 2 –Add the onions to the melted butter and cook, stirring occasionally, until they are softened, about 8 minutes.
Step 3 –Add the flour to the onions and cook, stirring constantly, until combined, about 1 minute.
Step 4 –Increase the heat to high. Add 4 cups of the chicken broth and 1 cup of the water to the onion mixture and bring to a boil, stirring occasionally.
Step 5 –Reduce the heat to medium-low. Simmer the soup, whisking occasionally, about 10 minutes.
Step 6 –Add the broccoli to the soup and bring to a simmer. Cook until the broccoli is very tender, about 20 minutes.
Step 7 –Transfer the pot from the heat and pour the soup, in batches, into a blender, filling it halfway. Cover the blender with the lid.
Step 8 –Unscrew and remove the cap from the hole of the blender’s lid to allow the heat to escape. Cover the hole with a paper towel and purée the soup, while firmly holding down on the paper towel, until it is smooth. Repeat with the remaining soup.
Step 9 –Pour the puréed soup back into the same pot over medium heat.
Step 10 –Add the heavy cream to the soup and heat, stirring constantly, until it is warmed through.
Step 11 –Taste the soup and season it with the salt, as needed. If the soup is too thick, thin it with the extra chicken broth and/or the extra water, if desired, and stir to combine.
Step 12 –Serve topped with the ground black pepper.
