When we’re settling in for a warm and cozy night, Grandpa’s Beef Soup is our favorite option for dinner. Nothing makes a house feel more like a home than the savory aromas filling the kitchen! A bowlful of this beefy, veggie-filled sipper really just makes you want to curl up and sit by the fire, and that’s our exact goal tonight. So, when you’re in the mood for that cozy escape, make sure Grandpa’s Beef Soup is a part of it.
Ingredients
- 1 1/2 pounds 90% lean ground beef
- 1 teaspoon salt
- 2 medium onions, chopped
- 4 cups cabbage, chopped
- 1 (16-ounce) package frozen mixed vegetables, such as carrots, green beans, corn, and peas
- 1 (28-ounce) can crushed tomatoes
- 1 bay leaf
- 3 teaspoons Italian seasoning
- 1/2 teaspoon pepper
- 2 (32-ounce) cartons reduced-sodium beef broth
Directions
Step 1 –In a 6-quart stockpot over medium-high heat, add the ground beef, the salt, and the onions and cook, while crumbling the meat, until the beef is no longer pink, about 6-8 minutes. Drain the excess grease.
Step 2 –Add the cabbage, the mixed vegetables, the tomatoes and their juices, the bay leaf, the Italian seasoning, the pepper, and the broth to the beef mixture and bring to a boil.
Step 3 –Reduce the heat and simmer the soup until the cabbage is crisp-tender, about 10-15 minutes.
Step 4 –Remove and discard the bay leaf.
Step 5 –Serve.
