Ingredients

  • 2 tablespoons salted butter
  • 1 medium shallot, chopped
  • 2 tablespoons all-purpose flour
  • 1 3/4 cups half-and-half
  • 3 cups frozen peas, thawed
  • 2 teaspoons white vinegar
  • nutmeg, freshly grated, to taste
  • 1/2 teaspoon kosher salt
  • black pepper, to taste
  • 1/2 cup crispy fried onions

Directions

Step 1 –In a medium saucepan over medium heat, melt the butter.

Step 2 –Add the shallots and cook until just softened, but not browned, about 1-2 minutes.

Step 3 –Add the flour and cook, while stirring, until incorporated and bubbly, about 1 minute.

Step 4 –Slowly add the half-and-half, while stirring, and bring the mixture to a simmer.

Step 5 –Add the peas to the cream mixture and cook until the sauce has thickened and the peas are just tender, about 5-7 minutes.

Step 6 –Add the vinegar, the nutmeg, the salt, and the pepper and stir to combine.

Step 7 –Pour the pea mixture into a serving bowl.

Step 8 –Serve topped with the fried onions.
