Ingredients
- 5 chicken thighs, bone-in and skin-on
- Greek seasoning blend, to taste
- sea salt, to taste
- freshly cracked pepper, to taste
- 1 tablespoon olive oil
Directions
Step 1 –Season both sides of the chicken thighs with the Greek seasoning blend, the sea salt, and the freshly cracked pepper
Step 2 –Add the chicken to a plate and place the plate in the refrigerator, uncovered, for at least 30 minutes and up to 3 hours.
Step 3 –Take the chicken out of the refrigerator 30 minutes prior to cooking.
Step 4 –Preheat the oven to 400 degrees F.
Step 5 –Heat the olive oil in a cast-iron skillet over medium-high heat.
Step 6 –Place the chicken into the skillet, skin-side down, and cook until the skin is golden-brown and flips easily, about 4 minutes.
Step 7 –Flip the chicken over.
Step 8 –Transfer the skillet into the oven and roast the chicken until the chicken is golden-brown and cooked through with the meat reaching an internal temperature of 165 degrees F, about 20-25 minutes.
Step 9 –Serve immediately.
