Ingredients

For the burritos:

  • 3 cups chicken, diced
  • 1 teaspoon Tajín® seasoning
  • 8 ounces cream cheese
  • 1/2 cup sour cream
  • 3 cups pepper jack cheese, shredded, divided
  • 1/4 cup fresh cilantro, chopped
  • 6 (8-inch) flour tortillas

Toppings:

  • 2 cups salsa verde
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 2 limes, cut in wedges
  • sour cream, optional, to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×13-inch baking dish with cooking spray.

Step 3 –In a skillet, add the chicken and the Tajín seasoning and cook until it reaches an internal temperature of 165 degrees F, about 5-7 minutes.

Step 4 –In a separate bowl, mix the cream cheese and the sour cream with an electric mixer until it is creamy.

Step 5 –Add 2 cups of the pepper jack cheese, the cooked chicken, and 1/4 cup of the cilantro to the cream cheese mixture and mix to combine.

Step 6 –Spoon a generous amount of the chicken mixture into the middle of each of the tortillas, evenly spreading the filling with a knife, folding the tortillas over, and placing them in the prepared baking dish.

Step 7 –Sprinkle the burritos with the remaining pepper jack cheese and bake until they are bubbly, about 30 minutes.

Step 8 –In a small bowl, mix the salsa verde and the remaining cilantro together.

Step 9 –Spread the salsa mixture down the middle of the burritos while they’re still in the baking dish.

Step 10 –Sprinkle the avocado down the middle of the burritos and garnish with the lime wedges.

Step 11 –Serve the burritos with the sour cream.
