Ingredients
For the chicken:
- 3 pounds of chicken thighs, boneless, skinless
- 1 cup plain Greek yogurt
- 2 teaspoons cumin
- 2 teaspoons cardamom
- 2 teaspoons turmeric
- 2 teaspoons cinnamon
- 2 teaspoons salt
For the tahini sauce:
- 1 cup tahini
- 1/2 cup lemon juice
- 4 cloves garlic, minced
- 1 cup water
- 1 teaspoon salt
For the garnish:
- parsley, optional
Directions
Step 1 –Cut the chicken into 1-inch pieces.
Step 2 –In a large bowl, combine the yogurt, cumin, cardamom, turmeric, cinnamon, and 2 teaspoons of salt.
Step 3 –Add the chicken to the bowl and toss until the chicken is evenly coated in the marinade.
Step 4 –Cover and refrigerate the chicken for 1 hour.
Step 5 –Tightly skewer the meat on soaked bamboo or metal skewers.
Step 6 –Preheat the grill to medium.
Step 7 –Place the marinated skewers on the grill and cook, turning often, until the chicken is cooked to 165 degrees F internally, about 6-8 minutes.
Step 8 –In a small bowl, combine the tahini, lemon juice, garlic, water, and remaining salt, stirring until smooth.
Step 9 –Serve the chicken warm with tahini sauce and garnished with parsley.
