Ingredients
- 4 ears corn, shucked and grilled
- 1/4 cup nuts such as walnuts, pecans, or pistachios, toasted
- 1 cup herbs, such as cilantro, basil, or parsley, chopped
- 1/2 cup pickled onions
- 1/4 cup parmesan, freshly grated
- 1/2 lime, juiced
- 1 tablespoon extra-virgin olive oil
- kosher salt, to taste
- freshly ground black pepper, to taste
Directions
Step 1 –Carefully cut the corn kernels off the cobs into a large bowl.
Step 2 –Use the bottom of a measuring cup or a small pan to crush the toasted nuts into small pieces.
Step 3 –Add the nuts, the herbs, the pickled onions, the parmesan, the lime juice, and the oil to the bowl with the corn, stirring to combine.
Step 4 –Taste for seasoning, adding the salt and the pepper, as needed.
Step 5 –Serve.
