Grilled Tilapia Piccata

Ingredients

  • 2 tablespoons olive oil, plus more, to taste, for oiling the grill grates
  • 1/2 teaspoon lemon zest, plus 3 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 2 teaspoons capers, drained
  • 3 tablespoons fresh basil, minced, divided
  • 4 (6-ounce) tilapia fillets
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

Step 1 -Using the extra oil, lightly oil the grill grates.

Step 2 -Preheat the grill to medium heat.

Step 3 -In a small bowl, whisk the lemon zest, the lemon juice, the remaining 2 tablespoons of the olive oil, and the garlic until blended.

Step 4 -Stir in the capers and 2 tablespoons of the basil.

Step 5 -Reserve 2 tablespoons of the lemon mixture.

Step 6 -Brush the remaining lemon mixture onto both sides of each of the fillets.

Step 7 -Sprinkle the fillets evenly with the salt and the pepper. Grill the fillets, covered, until the fish just begins to flake easily with a fork and is cooked through at 145 degrees F, about 3-4 minutes per side.

Step 8 -Drizzle the tilapia fillets evenly with the reserved lemon mixture.

Step 9 -Sprinkle with the remaining basil and serve.
