When the weather is warm and the grill is available, we’ll take any excuse we can get to fire it up! From burgers to salads, we’ll take it all. And yes, we said salads! This Grilled-to-Perfection Salad is our summer go-to. We love to pile our bowls full of our favorite mixed greens and juicy tomatoes. Then, this is where the grill comes in… we mix all of that together with some perfectly charred peaches for the most delicious, flavorful experience. Drizzle it with a little olive oil and lemon juice and you’ll soon understand why we call this the Grilled-to-Perfection Salad!
Ingredients
For the salad:
- 4 yellow peaches, cut into quarters
- 2 tablespoons olive oil, divided
- 2 teaspoons sea salt, divided
- 4 tomatoes, sliced into rounds
- 2 cups mixed greens
- 1 lemon, juiced
Optional toppings:
- microgreens, to taste
- feta, to taste
- balsamic vinegar, to taste
Directions
Step 1 –Heat the grill to 400 degrees F.
Step 2 –In a mixing bowl, add the peaches, 1 tablespoon of the olive oil, and 1 teaspoon of the salt and toss until the peaches are coated.
Step 3 –Lay the peach quarters on the grill grates and cook until grill marks form, about 2-3 minutes per side.
Step 4 –In a serving bowl, combine the grilled peaches, the tomatoes, and the mixed greens.
Step 5 –In a small bowl, add the remaining oil, the remaining salt, and the lemon juice and whisk until combined.
Step 6 –Drizzle the lemon mixture over the salad and top with the microgreens, the feta, and the balsamic vinegar.
Step 7 –Serve.
