Ingredients
- 6 large potatoes, thinly sliced
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 teaspoons taco seasoning
- 1/2 cup tomato sauce
- 1 cup salsa
- 1 cup whole kernel corn, drained
- 2 cups Alfredo sauce
- 3 cups Mexican cheese blend, shredded, divided
- fresh coriander, optional, to taste, chopped, for garnish
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –In a pot of salted boiling water, add the potatoes and cook until almost tender, about 10 minutes.
Step 3 –Drain the potatoes.
Step 4 –In a skillet over medium heat, add the ground beef and the onion and cook, while crumbling the beef, until it is no longer pink, about 5-7 minutes.
Step 5 –Add the garlic and cook until fragrant, about 30 seconds.
Step 6 –Add the taco seasoning, the tomato sauce, the salsa, and the corn and stir to combine.
Step 7 –Cook until heated through and the flavors have melded together, about 5 minutes.
Step 8 –Layer 1/2 of the potato slices in the bottom of a 9×13-inch baking dish.
Step 9 –Pour 1/2 of the Alfredo sauce over the potato layer.
Step 10 –Sprinkle the potatoes-sauce layer with 1 cup of the cheese.
Step 11 –Top the cheese layer with 1/2 of the beef mixture.
Step 12 –Repeat the layers.
Step 13 –Bake until heated through and starting to bubble, about 25-30 minutes.
Step 14 –Top with the remaining cheese and cook until bubbly, about 5 minutes.
Step 15 –Serve garnished with the coriander.
