Ingredients
- 4 tablespoons unsalted butter
- 1/2 large onion, cut into large wedges
- 1 1/2 cups water, can substitute low-sodium vegetable stock or low-sodium chicken stock
- 1 (28-ounce) can tomatoes
- 1/2 teaspoon fine sea salt, plus more, to taste
Directions
Step 1 –In a Dutch oven or a large saucepan over medium heat, melt the butter.
Step 2 –Add the onion wedges, the water, the tomatoes and their juices, and 1/2 teaspoon of the salt and bring the mixture to a simmer.
Step 3 –Cook, while stirring occasionally, until the flavors meld together, about 40 minutes.
Step 4 –Using an immersion blender, or by pouring portions of the soup into a blender, blend the soup.
Step 5 –Taste the soup for seasoning and add the extra salt as needed.
Step 6 –Serve.
