Using less sugar but never skimping out on flavor, Healthier French Toast Casserole serves up a spicy and fruity bread in a light custard and tops itself with some refreshing, juicy berries. Eating healthy never tasted so rewarding!
Ingredients
- 12 slices gluten-free cinnamon-raisin bread
- 1 1/2 cups milk or dairy-free milk
- 1/2 cup maple sugar
- 1 tablespoon pure vanilla extract
- 4 large eggs
- confectioners’ sugar, optional, to taste
- fresh berries, to taste
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Lightly grease an 8-inch square baking dish with cooking spray.
Step 3 –Place the bread, in overlapping layers, in the prepared dish in two even rows.
Step 4 –In a large bowl, whisk the milk, the sugar, the vanilla, and the eggs together.
Step 5 –Pour the milk mixture over the bread, pressing on the slices to help them soak up the liquid.
Step 6 –Place the baking dish in another larger pan.
Step 7 –Fill the pan with enough warm water to reach halfway up the sides of the baking dish.
Step 8 –Bake until golden brown and the custard is set, about 50 minutes.
Step 9 –Sift the sugar over the casserole.
Step 10 –Slice and serve with the berries.
