Healthier Spinach Artichoke Dip

Ingredients

  • 1/3 cup Greek yogurt
  • 1/4 cup Parmigiano-Reggiano cheese
  • 2 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and drained of moisture
  • 1 (10 ounce) jar marinated artichoke quarters, drained and coarsely chopped
  • 1/4 cup mozzarella cheese, shredded

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Use a hand mixer to blend together the Greek yogurt, Parmesan-Reggiano cheese, and garlic cloves.

Step 3 –Press all the water out of your spinach, then add the spinach and the chopped artichoke hearts to the cheese mixture.

Step 4 –Transfer the mixture to a small baking dish and top it with the shredded mozzarella.

Step 5 –Bake in the preheated oven until the cheese is bubbling and starting to brown, about 20-30 minutes.

Step 6 –Serve hot.
