Ingredients

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon olive oil, plus more, for greasing a baking sheet
  • 2 cloves garlic, minced
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 pounds Brussels sprouts, halved
  • 4 slices bacon, diced
  • 4 large eggs
  • 2 tablespoons parmesan, grated
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons fresh chives, chopped

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Lightly oil a baking sheet.

Step 3 –In a small bowl, whisk the balsamic vinegar, the honey, the olive oil, the garlic, the salt, and the pepper together.

Step 4 –Place the sprouts and the bacon in a single layer on the prepared baking sheet, drizzle with the balsamic vinegar mixture, and stir to combine.

Step 5 –Bake the sprout mixture until the sprouts are tender, about 10-12 minutes.

Step 6 –Transfer the pan from the oven, use a spatula to carefully create four wells in the sprout mixture, and gently crack the eggs into the wells.

Step 7 –Sprinkle the eggs with the parmesan, the red pepper flakes, the salt, and the pepper.

Step 8 –Bake the casserole until the eggs have set, about 7-9 minutes.
