Ingredients

For the dressing:

  • 1/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon Italian seasoning
  • 1 clove garlic, minced
  • 1 tablespoon Dijon mustard
  • red pepper flakes, to taste
  • kosher salt, to taste
  • freshly ground black pepper, to taste

For the salad:

  • 2 (15.5-ounce) cans chickpeas, rinsed and drained
  • 1 cup artichoke hearts, drained and quartered
  • 2 cups baby spinach, packed
  • 8 ounces mozzarella balls, quartered
  • 1/2 cup grape tomatoes, halved
  • 4 ounces sliced salami, quartered
  • 1/4 cup black olives, sliced
  • 1/4 cup pepperoncini peppers, sliced
  • 1/4 red onion, thinly sliced

Directions

Step 1 –In a large bowl, whisk the oil, the vinegar, the Italian seasoning, the garlic, and the mustard together.

Step 2 –Season the dressing with the red pepper flakes, the salt, and the pepper to taste.

Step 3 –In a large salad bowl, combine the chickpeas, the artichoke hearts, the spinach, the mozzarella balls, the tomatoes, the salami, the olives, the pepperoncini peppers, and the onions.

Step 4 –Pour the dressing over the salad and toss to coat.

Step 5 –Season the salad with more of the salt and the pepper to taste.

Step 6 –Serve.
