Ingredients
- 1 large sweet potato, scrubbed
- 3/4 cup kale, washed and chopped, allowing water to cling to the kale
- 1 cup canned black beans, rinsed
- 2 tablespoons water, plus more to taste, divided
- 1/4 cup hummus
Directions
Step 1 –Prick the sweet potato all over with a fork.
Step 2 –Microwave the sweet potato on high until it is cooked through, about 7-10 minutes.
Step 3 –In a medium saucepan over medium-high heat add the kale and cook, covered and stirring once or twice, until it is wilted, about 2 minutes.
Step 4 –Add the beans and some water to the saucepan, adding sooner than the 2-minute mark if the pan becomes dry.
Step 5 –Continue cooking the kale mixture, uncovered, until it is steaming hot, about 1-2 minutes.
Step 6 –Split the sweet potato open and top with the kale mixture.
Step 7 –Combine the hummus and 2 tablespoons of the water in a small dish.
Step 8 –Drizzle the hummus dressing over the stuffed sweet potato.
Step 9 –Serve.
