Healthy Year Breakfast is hearty, nutritious, and most of all — delicious! What's not to love?

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 small green bell pepper, diced
  • 1 small red bell pepper, diced
  • 1/2 small red onion, thinly sliced
  • 2 cups baby spinach, packed
  • 1/4 cup sun-dried tomatoes (not packed in oil), chopped
  • 1 clove garlic, sliced
  • 10 large eggs, beaten
  • 1 teaspoon salt, plus more to taste
  • freshly ground black pepper, to taste
  • hot sauce, to taste

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Heat the oil in a medium oven-safe nonstick skillet over medium-high heat.

Step 3 –Add the green bell pepper, the red bell pepper, and the onion and cook, stirring occasionally, until softened, about 6-7 minutes.

Step 4 –Add the spinach, the sun-dried tomatoes, and the garlic and cook, stirring frequently, until the spinach is just wilted and still vibrant green, about 1 minute.

Step 5 –Reduce the heat to low and add the eggs, 1 teaspoon of the salt, and the black pepper. Stir gently to distribute the vegetables.

Step 6 –Bake until the eggs are set, 13-15 minutes.

Step 7 –Let stand for 5 minutes, then slice into 6 pieces.

Step 8 –Serve with the hot sauce.
