Creamy beans in a succulent, rich tomato sauce infused with some chicken flavor! Bouncy pasta and herbaceous fragrance! And then sharp parmesan right on top! Really, just enjoying Hearty Italian Skillet isn’t enough; this is one pasta dinner you’ll want to share with everyone! It’s just that good!
Ingredients
- 1 tablespoon olive oil
- 12 ounces frozen fully-cooked Italian turkey meatballs
- 1 (28-ounce) can whole tomatoes, broken-up
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 1 (14-ounce) can water-packed quartered artichoke hearts, drained
- 1/2 teaspoon Italian seasoning
- 1 (14.5-ounce) can reduced-sodium chicken broth
- 4 ounces spaghetti, broken into 2-inch pieces (about 1 1/3 cups)
- 1/4 cup fresh parsley, chopped
- 1 tablespoon lemon juice
- parmesan cheese, to taste, grated, for topping
Directions
Step 1 –In a large skillet over medium heat, add the oil.
Step 2 –Add the meatballs to the hot oil and cook, while turning occasionally, until browned slightly, about 4-5 minutes.
Step 3 –Add the tomatoes and their juices, the beans, the artichoke hearts, the Italian seasoning, and the broth to the meatballs and bring it to a boil.
Step 4 –Add in the spaghetti and stir to combine.
Step 5 –Bring the spaghetti mixture to a boil, then reduce the heat to low.
Step 6 –Cover the skillet and let the spaghetti mixture simmer, stirring occasionally, until the spaghetti is tender, about 10-12 minutes.
Step 7 –Add the parsley and the lemon juice and stir to combine.
Step 8 –Serve topped with the parmesan.
