Ingredients

  • 4 tablespoons garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme, dried
  • 1 teaspoon rosemary, dried
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 2 pounds pork tenderloin
  • 4 tablespoons dijon mustard

Directions

Step 1 –Preheat the oven to 425 degrees F. Then, using non-stick foil, line a rimmed baking sheet.

Step 2 –In a small bowl, combine the olive oil, garlic, rosemary, thyme, salt, and pepper. Set aside.

Step 3 –Brush the tenderloins with the dijon mustard and then rub them with the herb mixture.

Step 4 –Set the pork on the prepared baking sheet. Roast in the oven until the crust is golden brown and an instant-read thermometer inserted into the center reads 160 degrees F, about 30 minutes.

Step 5 –Allow the pork to rest for 5 minutes before slicing and serving.
