What’s for dinner tonight?! Beef! And no, not the boring, ole, dry kind. It’s Herb-Roasted Beef Tenderloin, actually. And it’s perfectly juicy, melt-in-your-mouth tender, and loaded with herby spices and tanginess… basically, everything you could want in your main dish. Serve it with your favorite style of potato and a fresh veggie and you’ve got yourself a feast! Herb-Roasted Beef Tenderloin will be a house favorite in no time!

Ingredients
- 1 (5-pound) beef tenderloin, tied with kitchen string
- 4 tablespoons unsalted butter
- 1 tablespoon Dijon mustard
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh sage, finely chopped
- 1 tablespoon fresh thyme, finely chopped
Directions
Step 1 –Remove the tenderloin from the refrigerator and let it rest at room temperature for 1 hour.
Step 2 –Preheat the oven to 425 degrees F.
Step 3 –Set a rack inside of a baking sheet.
Step 4 –In a small bowl, combine the butter and the Dijon mustard and mix it well.
Step 5 –Rub all sides of the tenderloin with the butter mixture.
Step 6 –In a small bowl, combine the salt, the pepper, the rosemary, the sage, and the thyme.
Step 7 –Sprinkle the spice mixture evenly over the tenderloin and press the spice mixture into the butter mixture.
Step 8 –Place the tenderloin onto the prepared rack and roast for 30 minutes.
Step 9 –Lower the oven temperature to 350 degrees F and continue roasting the tenderloin until a thermometer inserted into the center of it reads at least 135 degrees F, about 5-10 minutes.
Step 10 –Transfer the tenderloin from the oven and let it rest for 30 minutes.
Step 11 –Slice the tenderloin and serve.
