Ingredients

  • 1 tablespoon fresh sage leaves, chopped
  • 2 teaspoons fresh thyme leaves, chopped
  • 1 teaspoon fennel seeds, crushed
  • 1/2 teaspoon crushed red pepper flakes, optional
  • 1/8 teaspoon ground nutmeg
  • kosher salt, to taste
  • ground black pepper, to taste
  • 1 1/2 pounds ground pork
  • 3 slices bacon, uncooked, diced
  • 2 tablespoons maple syrup, optional
  • 1 tablespoon canola oil

Directions

Step 1 –In a small bowl, combine the sage, the thyme, the fennel seeds, the red pepper flakes, the nutmeg, the salt, and the pepper together.

Step 2 –In a large bowl, combine the pork, the bacon, the maple syrup, and the sage mixture together, being careful not to over mix.

Step 3 –Scoop out 1/4 cup of the pork mixture and flatten it into a 3-inch-wide patty. Repeat with the remaining pork mixture until about 16 patties have been formed.

Step 4 –Heat the oil in a large cast-iron skillet over medium heat.

Step 5 –Add the patties to the oil in batches and cook, flipping occasionally, until they are browned and cooked through internally to 160 degrees F, about 2-3 minutes per side.

Step 6 –Serve.
