Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 6 large eggs
- 1/3 cup milk
Directions
Step 1 –Mix the flour, salt, and your nutmeg into a large bowl.
Step 2 –Beat the eggs and then milk together into a different small mixing bowl.
Step 3 –Pour your milk mixture into the bowl of dry ingredients, and mix the ingredients to create a smooth batter. You’re looking for a batter’s consistency that slowly drips off of a whisk or a spatula. You can add in more flour if it’s too wet, if it’s too dry add more milk. Allow the batter to rest.
Step 4 –Bring a large pot, 2/3 full of salted water, to a boil.
Step 5 –Pour in the batter through a spaetzle maker or through a cheese grater straight into the boiling water. The spaetzle will cook very fast and it will float to the top of the boiling water when it is done cooking.
Step 6 –Move the dumplings with a spoon when they float to the top.
Step 7 –Finally, melt 1/4 cup of butter in the skillet over medium heat, cook it until the butter smells toasty and begins to brown.
Step 8 –Add in the spaetzle, and then sauté it for 2 to 3 minutes, making sure to stir it often.
Step 9 –Sprinkle it with parsley, and serve warm.
