Ingredients
- 2 pounds ground beef
- 2 medium onions, chopped
- 4 (14.5-ounce) cans stewed tomatoes
- 8 medium carrots, thinly sliced
- 4 ribs celery, thinly sliced
- 2 medium potatoes, peeled and cubed
- 2 cups water
- 1/2 cup long-grain rice
- 3 teaspoons salt
- 1 teaspoon black pepper
- fresh parsley leaves, to taste, for garnish
Directions
Step 1 –In a Dutch oven over medium-high heat, add the ground beef and the onions and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.
Step 2 –Add the stewed tomatoes and their juices, the carrots, the celery, the potatoes, the water, the rice, the salt, and the black pepper to the ground beef mixture and stir to combine. Bring to a boil.
Step 3 –Reduce the heat to medium-low. Cover the stew and simmer, stirring occasionally, until the vegetables and the rice are tender, about 30 minutes.
Step 4 –Uncover the Dutch oven and simmer, stirring occasionally, until the stew has thickened to the desired consistency, about 20-30 minutes.
Step 5 –Serve the stew, garnished with the parsley.
